      Hi there! Welcome to Simple, Fast and Fit. This blog is designed to help you get healthy by following simple nutrition and fitness tips! I will be posting healthy Clean Eating recipies that are simple and fast to make and that will help you achieve your overall fittness goals. Lets face it we are all busy and sometimes that gets in the way of our health. The bad for you foods are just easier right? Thats what I thought too, untill I started Clean Eating, believe me if it isn't easy I don't make it. So I decided to start this blog to provide you with super easy, super good for you recipies that anyone can make!
 
   My name is Katie Scuffle, and as of November 2013 I started a overhaul on my life! I was having some health complications, and turns out I have a disorder known as Hypothyroidism. Basically what it meant is that my metabolism was not working due to an underactive thyroid. I was gaining weight, had 0 energy and lots of anxiety. Pretty much a miserable existance, but thats ok because with that diagnoses came motivation to make a change! I got on medication, but I knew that if I really wanted to feel better I would have to make nutritional and fitness changes to help get the best results from my meds. Thats when I found shakeology, clean eating and Beachbody workouts. I started in a clean eating group challenge group in November and can honestly say since then my life has changed! In that first month I lost 13 lbs, but more importantly my thyroid levels went from a 15 (normal is between 3 and 0.3) to a 1.5! I had energy again, I started working out, feeling so much better, and haven't had an anxiety attack since the change! I was so thrilled with my results that I decided to become a Beachbody Coach to help others reach their health goals.
     This blog is meant to show you that it can be done, and it is not that dificult, beleive me if I can do it anyone can! I am pretty busy I work 2 jobs, while my fiance is finishing up school. Most days I work anywhere between 8-13 hrs, and I have only had 15 days off in the last 12 months. So I understand the "I don't have time to cook excuse", because I use to use it A LOT. The recipes I post are simple some with as little as 2 ingredents. If it is difficult or time consuming I don't even go there because "Ain't no one got time for that!" You'll find alot of my recipes are meatless, because I haven't ate meat since I was 9, but occasionally the stars align and me and Larry (the fiancee) have a rare night home together and I cook a meat dish for him.
